These super moist and crisp golden muffins are easy to make and are best enjoyed with the family.

Strawberry Muffins

 ½ cup Milk
 ¼ cup Vegetable Oil
 1 tsp Grated Candied Ginger (Optional)
 2 Large Eggs
 2 cups Plain Flour
 1 ½ cups Chopped Strawberries
 1 cup Raw Sugar
 2 tsp Baking Powder
 ¼ tsp Salt
 1 cup Rolled Oats
 ½ cup Packed Brown Sugar
 2 tbsp Butter, Melted

Combine milk, oil, grated ginger and eggs in a large bowl. Stir in 2 cups flour, 1 cup chopped strawberries, sugar, baking powder and salt until just moistened.

In a small bowl, combine oats, brown sugar, and melted butter.

Spoon the strawberry batter into the paper cup filled muffin tins and sprinkle the rest of the chopped strawberries and the oat mixture on top.

Bake in 180 degrees Celsius oven for 15 to 20 minutes, or until the centres are set. Cool on a wire rack.
